I have a 91 Toyota Pickup with 300+ thousand miles on it. I am thinking about rebuilding it with some upgraded parts. I heard that you can put a Celica head on the motor and get a little more power out of it. Has anyone ever heard of this?

Never heard of a Celica head swap, but swapping a Celica 5MGE or 7MGE 6 cyl engine in is fairly common.

The only head swap I know of is from an early 20R 4 cyl to an 84 or earlier 22R.
