i've had my radiator re-cored, to a high flow, pull out the thermostat, the strange thing is some times i check the coolant level and its fine, once i checked it and i had to add a gallon of coolant, and then there is times when i check it and the coolant is all foamy, anybody got a clue what my problem is?

the car always smells hot when you open the hood.

Check your clutch fan and your compression.
It sounds like you have an internal boil over which can indicate a weak gasket or even bad valves. Make sure you also bleed your radiator when you add water/coolant. Another thing you should check is your radiator cap and if you can, you can also flush your engine through the block.
There is a drain plug on the side of the block under the exhaust.
