I just had one of those installed in my 2007 Camry LE. The part was easy to source and works like a charm. I particularly like that I can feed it through the AUX input in the factor head unit, but it still gives me another AUX input spare so I really didn't lose any expandability.
The fitting of the unit required my installer to take out most of the components from the console, but it was surprisingly pretty simple to watch him do it. Removed the two panels to the side of the console, then the main console itself came free pretty easily. The head unit and A/C came out easily enough. On the back of the head unit are all the sockets which are easy to get to. Just plug in the AUX converter, and then feed to it your outputs of your player (dual RCA stereo). That's it. Putting it all back together was a bit harder because of the amount of gear that I had installed, but after a couple of tries we got it. The only issue was that he blew a fuse on the AC control unit but that wasn't a big deal to fix.
Can't see how anyone could spend $300 in labor to do something like this though. Total time to do it, with a full Rockford/Fosgate OmniFi install into the car was about 3-4 hours. That's about $80-$100 an hour labor charge for something that a guy with the right info on how to disassemble the console could do easily. Dude, $300 for labor for this is a serious rip-off!
